Introduction :
Kumquats are often eaten raw. As the rind is sweet and the juicy centre is sour and salty. A Kumquat's texture is juicy, the flavor is tart then sweet and the fruit contains tiny white seeds, but the entire fruit is edible. 

Quality Indication :
Good-quality kumquats will be firm, bright orange and fairly large. 
Avoid product that is too small, overly soft or wrinkled.
