To ripen green bananas, put them into a plastic bag, seal it and place the bag in a warm place like your dry store refrigerator. This will cause the bananas to heat up which speeds the ripening process. You can also put other green fruit like peaches and pears into the bag with a ripe banana, causing them to ripen faster than usual.

Quality Indication:

Firmness is a very good indicator in determining the quality of products, and it has been used to measure the maturity and ripeness of fruit. There are seven stages of banana color during ripening and retailers usually sell banana fruits when they are at stage six in hence they are ripe upon arrival at destinations.

Temperature: From 13 to 14 degrees Celsius for storage and transport  
From 15 to 20 degrees Celsius for ripening
Humidity: From 90% to 95%
Storing: From 7 to 28 Days
