Taste and usage
The funny looking flag on the leaf is the start of the sprout.
The seeds stick to this 'flag' and give it a decorative effect.
The taste differs from the ordinary chives as it has a distinct garlic flavour.
The structure is too fine to use it for cooking or frying, however, it mixes well into
an omelette.Blanching is possible.
We have seen several creative uses of this product already, often as decoration.
Another is the use on a goose-liver pâté on toast with 5 shoots of Rock Chives as the finishing touch.
Also the combination with fish is successful, as is topping of a tomato-soup with some cream and
chopped Rock Chives.
Rock Chives is a chives type from the mountain regions of East Asia.
Especially in China it is used in various dishes for its fine taste.
The Allium family is huge and varies from Lilly’s to Shallots.
Rock Chives belongs to the group of seeded varieties. It has a mild garlic flavour, not present in
any other Chives.
